Sweet Red Peppers Stuffed with Goat Cheese 4 – red pepper halves from a jar (pickled in vinegar, etc.) 4 – oz. soft goat milk cheese, or more 4 - t dried currants 4 – T blueberry, raspberry, strawberry, or red wine vinaigrette Assembly: Gently mix dried currants with cheese. Place ¼ of cheese mixture on each pepper half, skin side down in a baking dish or steel sizzler platter which has been brushed very lightly with extra virgin olive oil. Roll to form “u” shape now with open side down. In oven set to 350 degrees, bake at 350 degrees for 5 minutes. Place 1 T vinaigrette over each pepper. Bake for an additional 5 minutes. Garnish with diced chives or scallions or parsley, and serve.
